Burrito Bowl

Great, cheap and simple to make... what more could you ask for!

  • Serves 6

  • £0.57 per serving

  • 185 calories per serving (not including garnishes)

Ingredients

  • one onion

  • 260g of prepared salsa

  • 370g of white rice

  • 1 can of black beans

  • 330g of frozen corn (i've found mixed veg works better here)

  • 1 litre of vegetable stock

  • 1 tablespoon of chilli powder

  • 1 teaspoon of ground cumin

  • garnishes such as cheese, wedges, sour cream. Get creative!

Method

  • Cut and fry the onion until softened.

  • Put the salsa, softened onion, black beans, stock and spices into a pan. Bring it to the boil

  • Add in the rice and frozen corn/veg and stir in.

  • Cover and simmer for around 15 minutes

  • Check the rice is cooked, you might need to add a bit more stock/water. If you do add a little bit at a time
