Chilli

Easy to bulk make and freeze, healthy, cheap, meat-free and so, so delicious. Great to have with pasta, rice, nachos or even chips.

Ingredients

  • vegetable oil

  • 3 onions

  • 3 peppers

  • 4-5 carrots

  • Pack of fresh chillies

  • Several cloves of garlic

  • 1 tsp smoked paprika

  • 4 tsp ground cumin

  • 6 tsp ground coriander

  • 1 tsp chilli powder (add more if you like it hot)

  • 4 cans of chopped tomatoes (or plum but you'll have to cut them up)

  • 2 boxes of passata (about a litre)

  • 2 tbsp tomato puree

  • 2 vegetable stock cube

  • 2 tins of kidney beans (800g)

  • handful of frozen peas

Method

  • Cut the carrots

  • Put the oil in the pan and heat it up to a mid heat, when hot throw the carrots in and put a lid on

  • While these are cooking cut up the onions, peppers and chillies

  • After about 5 minutes the onions can go in

  • Another 5 minutes and the peppers and chillies can go in

  • Once everything is softened put the garlic and spices in

  • Follow up the spices with the passata, canned tomatoes, puree, peas and kidney beans

  • Leave it to cook for 20 minutes stirring regularly

  • If you're cooking pasta, rice or alike now's a good time to put that on.

  • When all is ready serve and enjoy, freeze the leftovers for a quick healthy meal
