Easy to bulk make and freeze, healthy, cheap, meat-free and so, so delicious. Great to have with pasta, rice, nachos or even chips.

Ingredients
vegetable oil
3 onions
3 peppers
4-5 carrots
Pack of fresh chillies
Several cloves of garlic
1 tsp smoked paprika
4 tsp ground cumin
6 tsp ground coriander
1 tsp chilli powder (add more if you like it hot)
4 cans of chopped tomatoes (or plum but you'll have to cut them up)
2 boxes of passata (about a litre)
2 tbsp tomato puree
2 vegetable stock cube
2 tins of kidney beans (800g)
handful of frozen peas
Method
Cut the carrots
Put the oil in the pan and heat it up to a mid heat, when hot throw the carrots in and put a lid on
While these are cooking cut up the onions, peppers and chillies
After about 5 minutes the onions can go in
Another 5 minutes and the peppers and chillies can go in
Once everything is softened put the garlic and spices in
Follow up the spices with the passata, canned tomatoes, puree, peas and kidney beans
Leave it to cook for 20 minutes stirring regularly
If you're cooking pasta, rice or alike now's a good time to put that on.
When all is ready serve and enjoy, freeze the leftovers for a quick healthy meal
