Chickpea curry

Ingredients

  • Vegetable oil

  • 1 onion

  • 3 chilli's

  • 9 garlic cloves

  • thumb size of ginger

  • 1 tbsp ground coriander

  • 2 tbsp ground cumin

  • 1 tbsp garam masala

  • 2 tbsp tomato puree

  • 2 x 400g cans of chickpeas

  • 2x 400g chopped tomatoes

  • 100g spinach

Method

  • Add oil, onion and chilli to a pan. Cook for around 8 minutes or until softened.

  • In a food processor (or chopping board and a bit of effort) chop up the garlic and ginger. Add the results to all the spices and a splash of oil.

  • Once the onions and chilli's are cooked, add the spice, ginger and garlic mix to the pan. Cook for around 2 minutes stirring occasionally and taking some time to appreciate that amazing smell.

  • Add the chickpeas, tomatoes, spinach and cook until done.
