Lentil Ragu

An easy to make, easy to freeze and super healthy meal, even tastes great!

Ingredients

  • Vegetable oil

  • 3 onions

  • 4-5 carrots

  • 2 bell peppers

  • head of garlic

  • 500g of dried red lentils

  • 3-4 x 400g cans of chopped tomatoes

  • 2 tbsp of tomato puree

  • 2tsp of oregano

  • 2tsp of thyme

  • 1 litre of vegetable stock

Method

  • Cut the carrots

  • Put the oil in the pan and heat it up to a mid heat, when hot throw the carrots in and put a lid on

  • While these are cooking cut up the onions, peppers and chillies

  • After about 5 minutes the onions can go in

  • Another 5 minutes and the peppers can go in

  • Once everything is softened put the garlic, lentils, 2 tins of chopped tomatoes, the tomato puree, the herbs and all of the vegetable stock.

  • Bring to a simmer and cook with a lid on, stirring occasionally.

  • During cooking you will likely need to add a bit more liquid, if so put another tin of tomatoes in. If you feel it still needs a bit more liquid, add another in.

  • If you're cooking pasta, rice or alike now's a good time to put that on.

  • When all is ready serve and enjoy, freeze the leftovers for a quick healthy meal
