Lentil Ragu
An easy to make, easy to freeze and super healthy meal, even tastes great!

Ingredients
Vegetable oil
3 onions
4-5 carrots
2 bell peppers
head of garlic
500g of dried red lentils
3-4 x 400g cans of chopped tomatoes
2 tbsp of tomato puree
2tsp of oregano
2tsp of thyme
1 litre of vegetable stock
Method
Cut the carrots
Put the oil in the pan and heat it up to a mid heat, when hot throw the carrots in and put a lid on
While these are cooking cut up the onions, peppers and chillies
After about 5 minutes the onions can go in
Another 5 minutes and the peppers can go in
Once everything is softened put the garlic, lentils, 2 tins of chopped tomatoes, the tomato puree, the herbs and all of the vegetable stock.
Bring to a simmer and cook with a lid on, stirring occasionally.
During cooking you will likely need to add a bit more liquid, if so put another tin of tomatoes in. If you feel it still needs a bit more liquid, add another in.
If you're cooking pasta, rice or alike now's a good time to put that on.
When all is ready serve and enjoy, freeze the leftovers for a quick healthy meal
