Ingredients
one onion
260g of prepared salsa
370g of white rice
1 can of black beans
330g of frozen corn (i've found mixed veg works better here)
1 litre of vegetable stock
1 tablespoon of chilli powder
1 teaspoon of ground cumin
garnishes such as cheese, wedges, sour cream. Get creative!
Method
Cut and fry the onion until softened.
Put the salsa, softened onion, black beans, stock and spices into a pan. Bring it to the boil
Add in the rice and frozen corn/veg and stir in.
Cover and simmer for around 15 minutes
Check the rice is cooked, you might need to add a bit more stock/water. If you do add a little bit at a time
